San Choy Bow

Little bit changer version of one of my favourite starters at Chinese restaurants

San Choy Bow

  • 2oz rice noodles
  • 1/2 clove garlic
  • 1/2 " ginger
  • 3oz ground turkey
  • 1/4 cucumber (finely diced)
  • 1 handful bean sprouts
  • 1/4 carrot (grated)
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon soy sauce
  • 1/2 teaspoon fish sauce
  • 2 teaspoons lime juice
  • 1/2 teaspoon honey

1. Prepare rice noodles accordingly to instructions on the box.
2. Heat a pan over medium-high heat and spry with oil spray. Add garlic, ginger, and ground turkey and cook for 5 minutes, until the turkey is browned, stirring to break the meat up. Set aside.
3. Add the noodles, cucumber, bean sprouts, carrot, and cilantro to the meat and combine it gently.
4. Whisk soy sauce, fish sauce, lime juice, and honey together. Pour over the turkey and noodle mixture and toss gently to combine.
5. *optional: corn, I added around 1/3 cup.
