Italian classic, made with veal and Marsala sauce

Ingredients

  • 4 veal escalopes
  • 8 thin slices prosciutto
  • wooden toothpicks
  • 150ml marsala
  • 3 tablespoons butter
  • 1 tablespoon lemon juice

Directions

1. Flatten the veal slices, place 2 slices of prosciutto on top of each veal slice. Use toothpicks to secure the meat. Season with a bit of sea salt and black pepper.
2. Fry the veal in the oil and 2 tablespoons of butter for a few minutes on each side, until nicely browned. Remove the veal from the pan, cover and keep warm.
3. Pour the Marsala into the pan, scraping the base of the pan to loosen any flavorful bites. Simmer uncovered for few minutes. Add 1 tablespoon of butter and lemon juice, and stir. Season with salt and pepper. Put the meat back into the sauce and let it reheat for few minutes.
4. Serve with roasted potatoes and green beans.
