Egg Muffins

Ingredients

  • 2 Large eggs
  • 1 tablespoon milk
  • 3 tomatoes (cherry)
  • 1/3 cup zucchini
  • 4 mushrooms
  • 1/3 cup bell pepper (orange)
  • 4 thin slices salami
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup feta cheese

Directions

1. Preheat oven to 400°.
2. Spray muffin tins with cooking spray.
3. Cut all the vegetables into small cubes.
4. Combine eggs with milk, add all the remaining ingredients.
5. Divide mixture evenly between muffin tins (around 6-7).
6. Bake at 400° about 10-15 minutes.
