Garlic Shrimps, Kale & Cauliflower Mash

Garlic Shrimps, Kale & Cauliflower Mash

Ingredients

  • 4 cups cauliflower florets
  • 4 cloves garlic
  • 4 teaspoons butter
  • 8 cups kale
  • 1 tablespoon olive oil
  • 6oz shrimps
  • 3 tablespoons lemon juice

Directions

1. MASHED CAULIFLOWER: Place cauliflower florets and 2 cloves of garlic in a steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes. Place the cooked cauliflower in a food processor. Add 1 teaspoon of butter, salt and pepper; process until smooth and creamy.
2. KALE CHIPS: Preheat oven to 350F. Line a non insulated cookie sheet with parchment paper. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner; transfer to a large bowl. Drizzle the kale with oil and sprinkle with salt. Bake around 10-15 minutes, turning the leaves halfway through.
3. GARLIC SHRIMPS: In a Ziplock bag, mix garlic, salt, pepper, paprika and garlic and mix all ingredients together. Melt 2 teaspoons butter in a large skillet over medium high heat, add shrimps. Cook, stirring occasionally, until pink, about 10 minutes.

  1. OMG I’ve never heard of cauliflower mash, but how delicious does it look?! So glad to see I have all the ingredients for this bad boy at home. I’ll be sure to run it past the family!

    I’ve always loved shrimp and used to eat it a lot when I was single. My hubby and kids are not big fans so I don’t prepare it as much anymore. I will give your recipe a try. Yum!
