Coconut Omelette


Delicious, healthy sweet omelette, filled with favorite fruits. Perfect for Sunday Brunch!


Coconut Omelette


  • 2 eggs
  • 2 tablespoons honey
  • 2 tablespoons coconut (shredded)
  • 2 tablespoons yogurt
  • 1 cup strawberries


1. Add coconut oil to a non-stick pan and heat over medium-high heat.
2. Meanwhile, add eggs, shredded coconut and yogurt to a small mixing bowl and give this a good whisk, until well combined.
3. Pour that mixture into the preheated pan and swirl it around to spread your omelette evenly over the entire surface of the pan. Fry for about 7 min on a small heat.
4. Delicately slide your omelette onto plate, flip it and put back in the pan and fry another 3 minutes.
5. Ready omelette slide onto plate, spread with yogurt and cut strawberries, fold it in a half.
