Honey-roasted goat’s cheese salad

This salad is a light and delicious lunch idea!

Honey-roasted goat’s cheese salad

Ingredients

  • 250g salad mix
  • 350g goat's cheese (4 thick slices)
  • 1 tablespoon cranberry
  • 2 tablespoons olive oil
  • 1 tablespoon thyme (fresh)
  • 3 tablespoons honey
  • 12 Medium shrimps
  • 2 tablespoons lime juice
  • 2 tablespoons vinaigrette (your choice*)

Directions

1. Rinse the mix salad and spin in a salad spinner.
2. Preheat the oven to 480F. Place the goat's cheese on baking tray lined with baking paper. Drizzle with the olive oil and sprinkle with thyme. Drizzle the honey (leave one tablespoon) over the top and bake 5 minutes.
3. Meanwhile, in a medium bowl marinated shrimps with 1 teaspoon honey and lime juice. Fry them on medium heat for few minutes.
4. *The one I used: 1 garlic glove, a pinch of sea salt and black pepper, 2 tablespoons red wine vinegar, 1/2 teaspoon honey, 5 tablespoons olive oil
5. Arrange the salad and shrimps on individual bowls and place the warm goat's cheese on top or on a side (you can scatter the cheese with walnuts).
