Chicken & Cherry Tomatoes Salad


One of my favorite lunches - quick, easy, delicious and healthy, can't ask for more!


Chicken & Cherry Tomatoes Salad


  • 1 chicken breast
  • 2 cups arugula
  • 1 cup cherry tomatoes
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • pinch salt
  • pinch pepper
  • 1/2 teaspoon dried basil
  • 1 teaspoon sun dried tomatoes oil (you can use olive oil)
  • 2 teaspoons mustard
  • 1/2 teaspoon honey


1. Chicken marinade: combine paprika, turmeric, basil, salt, pepper and sun-dried tomato oil. Fry chicken pieces on a teflon pan without oil or add additional 1 teaspoon of sun-dried tomato oil. Fry on medium heat until the chicken is brown.
2. Cut the cherry tomatoes into halves or quarters and add to chicken, fry on small heat for few minutes.
3. To make the dressing mix honey and mustard.
4. Arrange the arugula in a bowl, add the chicken and tomatoes, drizzle with the dressing.
