Avocado Cucumber Soup


Refreshing and delicious chilled appetizer - perfect for hot summer afternoons.

Avocado Cucumber Soup


  • 1 Avocado (chopped)
  • 1 Cucumber (large)
  • 1/2 Jalapeno (small)
  • 1 cup Yogurt
  • 1/4 cup Chickpeas
  • 2 cloves Garlic
  • 2 Lime (juice)
  • 1 cup Water


1. Place all the ingredients (WITHOUT CHICKPEAS) in a blender and blend until smooth mixture. Add more water if needed. It depends how thick you want your soup to be, for me one cup was enough.
2. Pour soup into serving bowls and chill in the fridge for few minutes.
3. Fry chickpeas on medium heat until golden brown.
4. Garnish soup with fried chickpeas. Instead of chickpeas you can use green onion or slices of cucumber.
